There's only one man in the Alliance she trusts to pose as her husband--and it is strictly a matter of trust. Her feelings have nothing to do with it at all.
Luke isn't sure he's the best man for any sort of spying at a fancy party, but anywhere Leia wants him to go, he'll go. Besides, being undercover is his chance to at least pretend she loves him, if only for a short time.
