It was a well known fact that before coffee, Tony wasn’t functional, in the strictest sense of the word. Sure, he could stumble to the coffee machine, but that was more muscle memory than anything else. One time, Natasha had moved the coffee machine a foot to the left, and Tony had required JARVIS’s assistance to find it.
For all of his genius, Tony could acknowledge that the workings of his brain were entirely dependent on caffeine. Without it, he was known to do stupid things.
Stupid things like kissing Bucky squarely on the mouth as he shuffled his way to the coffee maker in the communal kitchen. While their relationship was still technically a secret.

HYDRA had wanted to destroy James Barnes.
Simple as.
Only it wasn’t as simple as HYDRA thought it would be—in concept the idea of wiping someone of their identity, of their personhood through torture is all well and good until you reach the point where each person’s response to torture is different.
Sure, torture is horrendous. But you shouldn’t count all your eggs before they hatch because they might not be what you expect.
In this case, James Barnes wasn’t wiped from existence. Instead, the Soldat came to be.
