Simon becomes obsessed with marshmallow fluff

This has gotten completely out of hand.

How has Simon gone his whole life without having Marshmallow Fluff?

HOW!?!?                                                                                                                                 

He’s a baker for Christ’s sake.

But since his discovery of the confectionery condiment, my kitchen may never recover. Both at home and at the shop.

I’ve had so many samples of his new concoctions, that I cringe whenever he tells me he has something new for me to try.

Today is no different.

“Babe!” Simon yells as he walks into my flat. “I think I’ve cracked it. Come try this.”

I consider ignoring him. But I know the numpty will just tornado his way through my flat trying to find me. No, it’s easier to just accept my fate.

“Coming,” I yell back.

I slowly make my way toward my kitchen, and I have to admit, whatever Simon has whipped up does smell divine.

Once there, I see a 9x13 inch pan filled with some kind of chocolate delight.

“What’s this now?” I ask him. Simon is bouncing on his feet in front of me. Barely able to control his excitement.

“I’ve cracked it!” He tells me. “I’ve got the perfect Fluff recipe.”

I can’t help but roll my eyes.

“Simon,” I start, seeing his face fall just by my tone alone. It kills me. Enough that I let out a sigh and say, “Fine, let’s have a bite then.”

He beams at me and cuts into his creation.

It’s a layered dessert. Some kind of cake, then the fluff, then a layer of ganache to top it off. I can’t deny that it looks delicious.

He plates it for me and I prepare myself for another round of this awful stuff.

I scoop up a small forkful and as soon as I place it in my mouth I know he’s onto something.

It’s rich, but not too rich. You could keep eating it forever. The fluff gives it its sweetness, but it’s not overwhelming. And the ganache on top at the perfect bitter end to it.

It’s the perfect dessert.

I can’t stop from moaning and shoveling another large bite into my mouth.

“Smogin fis ish pepheck,” I say through yet another bite.

“Like you always tell me, don’t talk with your mouth full, babe,” Simon tells me.

I can’t even be arsed to care.

He stands there and watches me basically lick the plate clean. His eyes glaze over a little, and I have a very dirty thought, but shake my head to get rid of it before we ruin the beautiful dessert that is sitting in front of us.

“That, “ I say. “That is incredible. How?”

“I dug through my grans recipe book,” he tells me. “Found one from a distant cousin in America. It’s called Mississippi Mud.”

“It’s brilliant,” I tell him.

“Figured it could be a holiday special?” He runs by me.

“We’ll sell those out every day for sure.”

“I hope so,” He says, still smiling at me like I handed him the moon.  He reaches out and runs his thumb across my bottom lip. “You had a little chocolate there,” he says, blushing.

“Are you sure you got it all?” I ask. “Best be thorough.”

I take a step toward him the same time he steps toward me.

He takes my face in his hands and examines it closely.

The next thing I know he’s licking up the side of my face like a dog.

“Snow!” I shriek at him.

He just laughs and runs toward my bedroom.

I start to go after him, but stop to grab the Mississippi Mud to take with me.

He can make another batch later.

I have plans for this one.



Mississippi Mud Recipe ( my families)

4 eggs

1 cup butter softened 

2 cups sugar

1 teaspoon vanilla extract

1 1/2 cups unsifted all-purpose flour

3/4 cup unsweetened cocoa 

dash of salt

1 jar (7oz) marshmallow fluff

Frosting

1/3 cup butter

1/2 cup unsweetened cocoa 

1/3 cup milk

1 teaspoon vanilla extract 

2 1/2 cups confectioners sugar

Preheat oven 350 degrees, grease 13x9 baking pan, set aside

In large mixing bowl with an electric mixer at medium, beat eggs, butter, sugar, and vanilla until light and fluffy, scraping sides of the bowl occasionally  add flour, cocoa, and salt  beat just until well blended. Spread batter evenly in pan  bake 40-45 minutes  immediately place dollops of marshmallow fluff on cake, spread until smooth. Let cool on wire rack at least an hour  

Frosting: in medium sauce pan melt butter, stir in cocoa and cook one minute. Remove from heat. Add remaining frosting ingredients, stir until smooth. Spread on top of marshmallow fluff. Cool. Enjoy!
